Good Morning - At least for a few minutes...almost lunch time.

IrishEyes has left a request for eggless recipes...Grandson has an allergy and would love some eggless cake or cookie recipes. I am going to set up a topic just for food allergies....if you can help with some eggless desserts it would be great!!!

I don't know what spices to use......any ideas?

Hi Brenda--nice proportions of the ingredients in your Italian spice blend. Italy is such a big country--it's hard to say one set of flavors represents it all. Many of the first Italians who came to the USA and Canada were Southern Italians--so their cooking style has dominated our perception of what Italian flavors are. We Northern Italians, however, do things a little milder.

I'd say the red pepper flakes are definitely a Southern Italian ingredient--never, ever used in Northern Italian cooking--sort of like how more spices and hot spices are used in the Southern USA compared to the more Northern states.

My Italian grandmother--who was a fantastic cook--only used salt, pepper, garlic, rosemary, sage, onions and occasional basil and she was from Florence, Italy--more in the North than the South of Italy.
