Mushroom Crust Quiche
from Gooseberry Patch

5 T. butter, divided
8-oz. pkg. mushrooms, chopped
1/2 c. saltine crackers, crushed
1/4 c. green onion, chopped
8-oz. pkg. shredded Monterey Jack cheese
8-oz. container small-curd cottage cheese
4 eggs
1/4 t. pepper
1/4 t. paprika

In a large skillet over medium heat, melt 3 tablespoons butter. Add mushrooms; cook for 6 minutes, until soft. Stir in cracker crumbs; press mixture evenly in bottom and up sides of a well-greased 9" pie plate to form a crust. Cook onion in remaining butter for 5 minutes, until soft. Spread over crust; sprinkle with cheese and set aside. In a blender, combine cottage cheese, eggs and pepper; cover and blend until smooth. Pour into crust; sprinkle with paprika. Bake at 350 degrees for 25 to 35 minutes, until a knife tip inserted near center tests clean. Let stand 15 minutes; cut into wedges. Makes 6 to 8 servings.
